“I love nutritional science,” he began. His passion for nutrition was ignited during his youth when he watched his father suffer from medical issues that conventional medicine couldn’t resolve. After changing his diet, losing 50 pounds (23 kg), and fully recovering, Fuhrman’s father inspired him to delve deeper into the field of nutrition. Joel read all 50 nutrition books his father brought home.

In the 1970s, Fuhrman, then a national-level figure skater for the United States, sustained a severe injury that left him unable to walk for over a year. During his recovery at a natural health center, he witnessed firsthand how dietary changes transformed people’s health. This profound experience solidified his passion for nutritional science.

A pivotal moment came during his sister’s college graduation party, where he met a young woman aspiring to attend medical school. Joel debated with her, arguing: “Doctors mainly prescribe medications to treat the consequences of a toxic lifestyle and diet. Instead, we should address the root causes.” Her response changed his life: “If you’re so passionate about this, why not attend medical school and make a difference?”

Motivated, Fuhrman left his position managing his family’s shoe store chain, enrolled in Columbia University’s premedical program, and pursued medical school. Now, he shares his journey and discoveries about the incredible impact of nutrition.

About the Nutritarian Diet

Fuhrman developed the concept of the “Nutritarian Diet” – a nutrient-rich eating style high in antioxidants and phytochemicals. This diet focuses on a high nutrient-per-calorie density, helping prevent disease, control weight, and curb cravings naturally.

In contrast, the standard American diet comprises 55% calories from refined and processed foods, 30% from animal products, and only 5% from fruits and vegetables. This imbalance fosters chronic illnesses such as heart disease, strokes, and cancer.

The Nutritarian Diet not only provides essential nutrients but also reduces hormones like insulin and IGF-1 that promote cancer and aging. As Fuhrman puts it: “The whiter the bread, the sooner you’re dead.” Conversely, “The more you eat green, the more you get lean.”
